Wine tasting
The correct way of wine tasting is not so easy. A good wine contains a lot of aroma and smell, which emphasize the character and the origins of the wine. To find this out you have to drink a good drop of wine with a lot of enjoyment.
Practical preconditions
The wine glass mustn’t show other kinds of smell and it should be clean. If several wines are taste, the glass will have to be washed out after each wine. With a white background you see the colour better. To neutralize the taste in your mouth a glass of water and a wedge of bread should always be available.
The colour of the wine
The wine mustn’t be clouding or milky. If the wine is clouding, then it is attributed to depositions of pigments or to the tartar. Clouding occurs more frequently in red wines than in white wines. The colour of the wine can betray the age, the origin, the type of grape and the quality.
White wines may darken or get brown in the course of time. Pale white wines come from cool countries. White wines with an intensive yellow come from countries with warm climatic conditions.
Red wines will get paler with the time and could also get a brown spot. The following rule applies to red wines: the warmer the climate in the country the darker the colour of the wine. Nowadays all wine-growers aim at colour intensity.
The smell of the wine
The correct way of smelling a wine needs a lot of practice. Before you smell you swirl the wine in the glass and let it breathe, to give it air. So the wine can spread its aroma and bouquet, like elder, apple, refreshing citrus style etc. For most people each wine tastes like the others, but they don’t know how many scents a wine is able to have.
The taste of the wine
The taste betrays less than the smell, but you get further impressions of the wine. When you take a sip or better a mouthful, you should push the wine around in your mouth. Experienced tasters open their mouth a little bit and suck some air that the aroma moves up in the throat. Then you swallow or spit it out. If you can still taste the wine long after you have swallowed it we talk about a long finish. A long finish signifies high-quality.
The acidity content
At first beginners should at first find out if the wine is sweet or sour. The acidity content of wines from cooler countries is higher than that of wines from warmer countries. If the wine doesn’t have acidity, it will be missing the essential freshness. The wine will just taste sour, if there is no balance of fruit, acidity and alcohol.
Tannin
This is the substance in the skin of red grapes. Black Tea also contains it. The tannin content is very important for red wines and makes older red wines softer and more pleasant.
A wine that has little acidity and tannins is inexpressive and tastes insipid. Because of that, it is very important to find a good balance between the acidity content, the alcohol content and the tannin content to emphasize the character of the wine.
